Recipes I Want To Make This Week From Pinterest

I've got my boards all organized and ready for you to come and visit.  I really love Pinterest and I'm not sure what I did before it existed!  I am a very visual person, so to to be able to "pin" my most favorite things from the web onto organized boards makes me very happy. 

I especially love visiting my Recipes Board at the beginning of the week when it is time to start planning our menu for the week.  I also post recipes on a Vegan board, so if a plant based diet is appealing to you, you can check that out.

Here are my finds for this weeks menu.  I looked for frugal recipes, as our grocery budget is a bit lower than usual this month.  Good thing I like a challenge!


Peanut Butter Banana Oatmeal Squares
From Pinterest--"Healthy, quick breakfast. A pan doesn't last 2 days in our house. They're delicious and super good for you, especially if you substitute applesauce for the brown sugar--one bar is 128 calories & 5 grams of protein. YUM! Awesome toddler food, too!"




Fruit Salad with Honey Lime Dressing.  The dressing gives the salad a nice, shiny, glazed look!

Roasted Balsamic Vegetables with Pasta
This recipe adds a few tablespoons of yogurt at the end to make the pasta creamy.


Corn, Black Bean & Beef Empanadas
I love the idea of these!  Baked, not fried.  Can be made ahead and frozen, then baked straight from the freezer.  I will make mine with just beans and salsa, maybe some rice & make my families with a bit of beef, beans and cheese.  Nice!




Mexican Rice
This would go great with the empanadas, and it uses ingredients I always have on hand--tomato sauce, broth, mixed vegetables & rice.


No Bake Peanut Butter Pretzel Bars
I'm a sucker for salty and sweet which is why these bars caught my eye.  They are also easy enough for my kids to make--bonus!

Caramelized Chicken

Linguine with Garlicky Bread Crumbs

This one is from one of my new favorite blogs called My Little Celebration.  Beautiful photos and great recipes!


Salt & Vinegar Roasted Chickpeas
Did you know when you roast chickpeas, they get nice and crunchy? Perfect little munching snack. I'm eager to try this vinegar version.
