Recipes I Want To Make This Week From Pinterest

It's that time again--time to make my weekly menu.  It used to take me much longer searching through cookbooks, but now I just hop on my Pinterest boards.  I have 2 food board, one named "Recipes" and one named "Vegan."  Here are a few I found that I want to try this week:

Spiced Coconut Red Lentil Soup.
 I make my husband soup to take to work each week.  Well, most weeks.  Lately I have been a slacker. I'm gonna get back on track with this healthful soup!


Turmeric Chai Tea
I have not made this in awhile, and seeing the picture of it again on Pinterest made me crave it.


Salt & Vinegar Roasted Chickpeas
I didn't get to these crunchy little snacks last week, because I was out of vinegar!  I now am fully stocked and ready to rock!


Crockpot Homemade Applesauce
Another recipe I have not made in awhile.  My youngest has been asking for it and I have a bunch of green apples sitting in the refrigerator.  Can't wait to have my house smell like apple heaven!


Healthy Cookie Dough Dip
Is there really such a thing?  This recipe intrigues me...its base is pureed garbanzo beans!  It does have quite a bit of sugar, but at least you get some protein with that sugar!


Sweet Potato Hash
Have you noticed I have a huge love for sweet potatoes?  I eat them all the time.  They are yums.


Spring Rolls w/ Peanut Hoisin Sauce
I'm going to make these for dinner, then cross my fingers and hope my girls will eat them!


Quinoa & Black Bean Salad
I need to get some protein in me, as I have been getting myself to the gym much more frequently lately.  I'm love that this can be a main dish for me and a side dish with some chicken for the rest of my family.


Sweet Baby Rays Crockpot Chicken
Love recipes that you can just throw into the crockpot.  I will serve this with sweet potato hash.


Crockpot Coconut Chicken Curry
I'm planning on adding potatoes and carrots to this to make it more "plant friendly."


Orange Glazed Salmon
Gonna join my family in eating this one, as I am a "plant- eater- sometimes- cheater."  I love to eat fish when I "cheat."


Chocolate Cherry Fudge Bites
Vegan, Gluten Free, Dairy Free and Corn Free.  Beth from Tasty-Yummies says they taste delish so I will give them a try!

  2. Um, I just had a baked sweet potato for lunch. I love those! I got my brothers hooked on sweet potato fries, have you ever made those? We have them at Thanksgiving every year now.
